I love pulling vintage recipes out of my recipe box. We recently bought a bag of lemons from Costco to squeeze for juice, so we’d have it on hand for recipes and cocktails. Lemon bars are one of my favorite treats, and this recipe is a winner! The recipe is my sister’s and I have been making them since I was about ten years old. They are perfect, cut into small squares for weddings and baby showers. There’s just something so special about the creamy lemon curd filling.

Sister's Lemon Bars
Ingredients
- 3/4 cup cold butter
- 1/3 cup powdered sugar
- 1 1/2 cups All-purpose flour
- 3 eggs
- 1 1/2 cups sugar
- 3 TBL all-purpose flour
- 3 TBL fresh squeezed lemon juice
Instructions
- To make crust:Cut butter into powdered sugar and flour. Mix until it comes together like cookie dough. Press into a 9x9 square baking pan. Bake at 350 degrees for 20 minutes.
- For filling:While crust is baking - whisk three eggs adding in the sugar, flour and lemon juice. Whisk until thouroughly combined. When crust comes out of oven, whisk egg mixture again then pour evenly over hot crust. Put back into oven and bake an additional 20-25 minutes until the edges are slighlty brown. Do not overcook.Let cool completely. Cut into squares and dust with powdered sugar.
