I associate fall with baking, especially pumpkin-flavored treats.  Even though it’s still over 100 degrees here in North Texas, I am not letting the weather stop me from dipping my toe into fall.  I love to load up my cart of seasonal flavors at Trader Joe’s. I have been a fan of their Pumpkin Bread mix for years. Just add a few ingredients, and you can make semi-homemade pumpkin bread in about an hour.

One trick I do is that after I butter the sides and bottom of my baking pan, I replace the flour with cinnamon and sugar. This gives the bread a nice crispy coating. King Arthur Baking Company has a selection here of what they call “Jammy Bits”. I started using them as mix-ins last year when I made cookies and scones. These sunny sweet fruit gummies are made from a blend of real fruit, sugar, and pectin. Cut into tiny squares, they melt into warm, jammy pockets as they bake, adding gooey bursts of orange goodness to muffins, quick breads, waffles, scones, or even uncooked in trail mix. For the pumpkin bread, I used orange jammy bits and ginger. Gosh, it made the pumpkin bread so flavorful, moist, and so special.  Make a loaf of this bread, brew a pot of coffee, and invite a few friends over to celebrate the first day of fall.

Cinnamon Toasted Pumpkin Bread

Ingredients
  

  • 1 Box Trader Joe's Pumpkin Bread Mix
  • 1/3 cup King Arthur Baking Co. Diced Mini Ginger
  • 1/3 cup King Arthur Baking Co. Orange Jammy Bits
  • Powdered sugar, to sift on top of the finished bread

Instructions
 

  • Preheat your oven to the temperature on the box
  • Generously butter a loaf pan.
  • Sprinkle the sides and bottom of the loaf pan with cinnamon and sugar. This will replace the flour you usually use to prepare a pan.
  • Pour 1/2 the batter into the loaf pan.
  • Sprinkle the batter with half of the ginger and orange bits.
  • Pour the remaining batter, then finish sprinkling the remaining ginger and orange bits over the top.
  • Bake for about an hour or until a cake tester comes out clean.
  • Let cool slightly in the pan, then remove and place on a plate, sprinkle with powdered sugar before serving.
