My Mother's Coffee Cake Recipe

Ingredients
  

  • 1 box yellow cake mix
  • 3 eggs
  • 1/4 cup canola oil
  • 1 cup water
  • 1 cup crushed graham crackers
  • 1/2 cup chopped pecans
  • 1/2 cup brown sugar (packed)
  • 1 1/4 tsp cinnamon
  • 1/2 cup butter, melted

Instructions
 

  • Preheat oven to 350 degrees. Grease and flour a bundt pan. Set aside.
  • Mix cake mix with oil, eggs, and water. Mix with a handmixer for 2 minutes until blended. Set aside.
  • Mix graham cracker crumbs, pecans, brown sugar, cinnamon and melted butter in small bowl. Mix with a fork until blended.
  • Pour half the cake batter in the bundt pan.
  • Top with half of the crumb mixture.
  • Pour remaining cake batter on top of the crumb mixture.
  • Sprinkle the remaining crumble mixuture on the top of the second layer of batter.
  • Bake for 45 minutes.
  • While cake is baking, Mix one cup of powdered sugar with 1 TBL milk.
  • Let cake cool for about 20 minutes before inverting onto a cake plate. Drizzle icing over the top.
