

My Mother's Coffee Cake Recipe
Ingredients
- 1 box yellow cake mix
- 3 eggs
- 1/4 cup canola oil
- 1 cup water
- 1 cup crushed graham crackers
- 1/2 cup chopped pecans
- 1/2 cup brown sugar (packed)
- 1 1/4 tsp cinnamon
- 1/2 cup butter, melted
Instructions
- Preheat oven to 350 degrees. Grease and flour a bundt pan. Set aside.
- Mix cake mix with oil, eggs, and water. Mix with a handmixer for 2 minutes until blended. Set aside.
- Mix graham cracker crumbs, pecans, brown sugar, cinnamon and melted butter in small bowl. Mix with a fork until blended.
- Pour half the cake batter in the bundt pan.
- Top with half of the crumb mixture.
- Pour remaining cake batter on top of the crumb mixture.
- Sprinkle the remaining crumble mixuture on the top of the second layer of batter.
- Bake for 45 minutes.
- While cake is baking, Mix one cup of powdered sugar with 1 TBL milk.
- Let cake cool for about 20 minutes before inverting onto a cake plate. Drizzle icing over the top.
