The biggest mistake we make when hosting dinner is treating our menu like an audition for culinary school.
We plan three appetizers, an elaborate entrée, three hot sides, and a scratch dessert—and then spend the entire evening sweating over stove burners while everyone else is laughing in the living room.
After 40 years of gathering people around my table, here is the secret to an effortless evening:
My Dinner 123 Formula.
• 1 Signature Drink (poured and waiting)
• 2 Bookends (1 simple starter + 1 make-ahead dessert)
• 3 Plates (1 entrée + 1 side + 1 salad)
When you simplify the menu, you get your evening back. Your guests did not come to evaluate your culinary stamina—they came to see you.
