I post Mother’s recipe for sweet potato delight every year, and many of you have told me it is now part of your Thanksgiving tradition. My mother would be thrilled! Sweet Potato Delight (aka casserole) is a dish that Mother and Sister have served at our Thanksgiving table for many years. I love it, and the meal wouldn’t be the same without it. In fact, our daughter always has it at the top of her “wish list” too. It’s almost like dessert with the buttery, crumbly topping.
Home with a Twist Sweet Potato Casserole
Ingredients
- 2 Lg Cans Sweet Potatoes
- 2 TBL orange juice (from a fresh orange)
- 1 stick melted butter
- 1 tsp vanilla (real not imitation)
- 3/4 cup sugar
- 1/3 cup evaporated milk
- 2 eggs, beaten
- 1 cup brown sugar
- 1/3 cup flour
- 1/3 stick of butter
- 1/2 cup chopped pecans
Instructions
- Heat potatoes with juice and orange juice in sauce pan and mash thouroughly.
- Allow to simmer on medium heat so the juices thicken and reduce
- Remove from stove and add in one stick of melted butter, vanilla, sugar, evaporated milk. Mix thourougly.
- Add in two beaten eggs.
- Pour into a greased baking dish.
- Make the topping by mixing together the brown sugar, flour, remaining butter, and pecans. Mix into a crumble and sprinkle along the top of the sweet potatoes.
- Bake at 350 degrees for 30 minutes or until set.
