Home with a Twist Sweet Potato Casserole

Ingredients
  

  • 2 Lg Cans Sweet Potatoes
  • 2 TBL orange juice (from a fresh orange)
  • 1 stick melted butter
  • 1 tsp vanilla (real not imitation)
  • 3/4 cup sugar
  • 1/3 cup evaporated milk
  • 2 eggs, beaten
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1/3 stick of butter
  • 1/2 cup chopped pecans

Instructions
 

  • Heat potatoes with juice and orange juice in sauce pan and mash thouroughly.
  • Allow to simmer on medium heat so the juices thicken and reduce
  • Remove from stove and add in one stick of melted butter, vanilla, sugar, evaporated milk. Mix thourougly.
  • Add in two beaten eggs.
  • Pour into a greased baking dish.
  • Make the topping by mixing together the brown sugar, flour, remaining butter, and pecans. Mix into a crumble and sprinkle along the top of the sweet potatoes.
  • Bake at 350 degrees for 30 minutes or until set.
