In a mixing bowl, using an electric hand mixer, whip together cream cheese and lemon zest until cream cheese is smooth.

Did you know Girl Scout troop leader Loretta Scott Crew is credited with the first known recipe for s`mores, which was published in 1927 in the Girl Scout handbook Tramping and Trailing with the Girl Scouts. The recipe was originally called "Some More" and was intended to feed 16 scouts. It called for 16 graham crackers, eight chocolate bars, 16 marshmallows, and eight roasting sticks. The recipe instructed scouts to toast marshmallows over the coals until they were crispy and gooey, then sandwich them between a graham cracker and a chocolate bar. We went to the Sunflower Festival in Gilliam and picked sunflowers and zinnias. Fields full of blooms as far as the eyes could see.🌸🏵. Ate delicious seafood and made S`mores on our patio.
We even toured the Bonnie & Clyde Ambush Museum in Gibsland. That was interesting! Such a piece of history since the infamous couple were from Dallas, and my Daddy pumped gas for them when he was about 8-9 years old when they`d stop in Fort Worth.

I met this gorgeous woman @catherinewhite.art several years ago via Instagram. We became "pen pals" via our DMs and learned we have a lot in common.
Last night, she and her husband hosted a lovely dinner party, and I witnessed her hospitality in action. Delicious welcome cocktails, cold avocado soup in the garden, a gourmet dinner ending with a delicate peach cake.
Catherine has become one of my closest friends. I love spending time with her. We hear so many negative things about social media, but in this case, finding her makes me a winner!

Now that the days are a little more lazy pizza is an easy weeknight dinner. I`m sharing an easy pizza dough recipe on my blog today that just takes an hour to rise and can be refrigerated for three days!

Now that the days are a little more lazy pizza is an easy weeknight dinner. I`m sharing an easy pizza dough recipe on my blog today that just takes an hour to rise and can be refrigerated for three days!

Easy summer dinner idea - we buy bags of frozen shrimp from Costco. They are a quick thaw, so you can whip up shrimp tacos in a jiffy. SAVE this post for later.
Shrimp Taco seasoning:
1 tsp chili powder
1 tsp ground cumin
1 tsp paprika
1 tsp oregano
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1 tsp brown sugar
Mix spices in a bowl. Toss in one pound (or, in my case, 20 pieces of shrimp). Toss to coat all the shrimp. Heat 2 tsp olive oil in a cast iron or regular skillet. Add shrimp in a single layer and cook two minutes on each side. Serve with whatever you like - taco shells, tortillas, or over a salad.

We stayed a week at the stunning @vidanta resorts, and it was beyond amazing. Blue waters, white sand, friendly staff, delicious food, and daily activities - you should have seen us at water aerobics. Lazy days by the pool, swimming in the ocean, and we had the best seats a @cirquedusoleil! ⛱️ Happy hour BTW is noon to 2 p.m. 🍸🍹
