It`s not Thanksgiving without my Mother`s recipe for Sweet Potato Delight. Be sure to save for later!
2 large can of sweet potatoes drained
Heat potatoes and mash thoroughly. If you want to bake sweet potatoes ones you can, but this tastes just as good.
Mix together:
One stick of melted butter
1 tsp vanilla
3/4 cup of sugar
1/3 cup of evaporated milk
2 beaten eggs
Combine all of the ingredients and pour into a buttered 9×13 dish.
Top with the following mixture:
1 cup of brown sugar
1/3 cup of flour
1/3 stick of melted butter
1/2 cup of chopped pecans (optional)
Bake at 350 degrees for 30 minutes or until set.

It`s not Thanksgiving without my Mother`s recipe for Sweet Potato Delight. Be sure to save for later!
2 large can of sweet potatoes drained

SAVE my recipe for Lemon Parmesan Roasted Cauliflower. You will love it! It`s so easy to make and delicious. Here`s the recipe 👇
One head of Cauliflower washed and cut into bite sized florets
3 large cloves of garlic, minced
1/4 cup olive oil
2 Tbl fresh lemon juice
1/2 tsp salt
1/4 tsp pepper
2 Tbl freshly grated Parmesan (not from a bag or can)
Preheat oven to 450 degrees F. Combine cauliflower and garlic in a bowl. Add all the ingredients except for the Parmesan cheese.
Transfer to a baking sheet and spread in a single layer. Roast for 25 minutes stirring once. Sprinkle with cheese immediately after removing from oven. Serve immediately.
